This Order is regulated by the Danish Veterinary and Food Administration and provides guidelines for the surveillance of salmonellosis and Salmonella (including Salmonella Dublin) in cattle and all animals other than pigs and poultry which are destined to human consumption. The document covers primary production, monitoring, slaughtering and related management of meat through inspection, laboratory testing and study of the bacteria. Research and inspection shall be performed in DANAK, EA and ILAC accredited testing laboratories.
