This Regulation prescribes maximum concentrations of certain contaminants in food. Maximum concentrations of certain contaminants in food are given in Annex 1. Food listed in Annex 1 shall not be placed on the market if it contains a contaminant in a quantity exceeding the maximum permitted concentration set out in Annex 1. Food that complies with the maximum concentrations of certain contaminants set out in Annex 1 may not be mixed with food that exceeds those maximum concentrations. Maximum concentrations of certain contaminants in food shall apply to the edible part of the food, unless otherwise provided for in this Regulation. In systems where cereal production and processing are integrated so that all incoming batches are cleaned, sorted and processed in the same facility, maximum concentrations apply to unprocessed cereals in the production chain at the stage before the first stage of processing. Maximum concentrations for acrylamide, a contaminant of the production process, are reference levels for the presence of acrylamide as performance indicators used to verify the effectiveness of measures to mitigate the effects of acrylamide on human health and are based on experience and occurrence in a large number of food categories.
