Without prejudice to the general rules on foodstuffs, oenological practices and processes are governed by the Community rules laid down in Chapter I of Title V of Regulation (EC) No. 1493/1999 and the Annexes thereto. In addition, the present Regulation sets out the Community code of oenological practices and processes. The latter contains detailed rules for implementing Regulation (EC) No. 1493/1999, particularly those provisions relating to products intended for use in winemaking (Title I) and oenological practices and processes authorized in the Community (Titles II and III).
The Regulation consists of the following four Titles: (I) Requirements for certain grapes and grape musts; (II) Oenological practices and processes; (III) Experimental use of new oenological practices; (IV) Final provisions. In addition, 18 Annexes are attached. Annex IV lays down restrictions on the use of certain substances. Annex V establishes purity criteria.
