This Regulation prescribes conditions, criteria and procedure for classification of pig meat into categories and classes on the slaughter line, the method and procedure for sorting, grading and marking of carcasses with prescribed signs, the conditions to be fulfilled by persons carrying out the process of classification, and supervision of these operations.
Data on the quality of pig meat is used to determine the selling price of slaughtered pigs.
The process of grading meat is carried out in the slaughterhouse immediately after the animal health inspection and determination of the mass of the slaughtered animal.
